UTF-8 Support Questions

Hi, I put this in the general section because I was not sure where it belonged.

I have a few questions regarding UTF-8 support, The site I'm working on is multi-lingual and will possibly have more languages added as time goes by. Initially the default language will be eng-AU and the alternate langs will include eng-GB, eng-US, fra-FR, chn-CN with the possible inclusion of many more.

For every site I develop I generally use UTF-8, I have done so for a very long time and I would like to continue that trend, I have looked at a number of posts regarding the conversion to UTF-8 and have noticed some people tend to say "dont do it".

What I would like to know before I try the conversion is: -

Have you converted to UTF-8, if so were there any issues that arose in the process that caused major headaches?

What method would you recommend to do the conversion? I have seen a few conversion scripts and there appears to also be ways to do this via console commands.

Do versions 3.6 and up make it easier to convert or is UTF-8 conversion still a major task to undertake, as it seems to have been in older versions?

Do you have any arguments for or against converting to UTF-8?

Please let me know any thoughts you may have on this.
