I have a client who has asked the "Is it possible at all to run ez publish from a dvd?" question, my initial gut feeling is that its not possible, since the set-up is dynamic, however I'm open to opinion? Suggestions anyone?

Mike,
eZ is not an executable. you would need to ship it with a full webserver stack, the cd would have to be bootable and run a linux install.

Its even possible on a cd with puppy / dsl and so on linux cd's.As for not possible to save changes, thats almost true, you loose changes when you reboot with most live cd's. Puppy has a mode where it writes changes back to cd by leaving it open so it is writable though.
