Hi guys,
I need to set some limitations to a user administrator role, giving him the right to create objects of a specific group of classes under a specified node.
In other words, when he clicks on create new, under a specific node, he just has to see as available classes the ones belonging to a class group.
By creating a new role to be assigned to that specific user, how can I allow everything except that exception?

You cannot set "everything except" in the roles and policies system. You have to assign specific roles to the user for everything you want them to be able to do.
Also note, changing the roles of the admin user is not wise, it's better to create a new user (e.g. main editor) and assing the permissions to him.
If you want to allow some user(s) to create only some classes under one specific nodes, you can set that in the step 3 of content/create policy.
