EZ publish is a very strong and flexible CMS.
When you are new on the subject, It is not so easy to find the information needed.

What I suggest you, is to read about the philosophy under this CMS. Especially on Overrides and security Roles. You can find the basics on the Ez publish official site.

You can also do some simple changes to the basic site like this:

http://ez.no/community/forum/setup_design/how_to_customize_change_look_and_feel_of_ez_publish_3_7
http://ez.no/products/ez_publish/demo/flash_demos/menu_toolbar_management

This is a good start too see the possibilities!

But I would recommend you to start changing the css-files and the
pagelayout (and other templates).

Take a look at these examples:
http://ez.no/products/ez_publish/demo/flash_demos/creating_a_custom_style_part_i_creating_an_offline_copy_of_the_site
http://ez.no/products/ez_publish/demo/flash_demos/creating_a_custom_style_part_ii_shuffling_layout_elements
http://ez.no/products/ez_publish/demo/flash_demos/creating_a_custom_style_part_iii_changing_site_colours
http://ez.no/products/ez_publish/demo/flash_demos/creating_a_custom_style_part_iv_creating_a_new_style_package

The site you mentionned (rigibore.co.uk) is effectively customized. But it is not hard to get to this point.
