Creating categories the ez way

I am very new to ez publish and I don't have the ez publish thinking yet. May be somebody can explain what the right approach would be. Here is my problem.

I am creating a content class "project". This class holds info like name, description, date added, etc. This class needs to be an information collector so that users can add their own projects.

Now my problem is in the categorization of a project. The user should be able to select the appropriate category this project belongs. Somehow I want to have a pull down menu with categories. But on the other hand a user also needs to be able to surf all the projects via a directory style web page.

What is the best way to create these categories? Should i create a content class category and put all the categories I have in there? If I do I that way then how can I automatically generate a pull down menu with all my categories for the project class?

I am sure that there is an easy solution for this but I just did not find it yet by reading the forums and documentation.

Can somebody point me in the right direction? thanks
