Can anyone point me to a site that has VERY SIMPLE instructions on how to upgrade my EZ publish and how to recover my sites data if the upgrade doesn't go well?

Once again I HAVE to say this. NOT a developer, hence my asking for SIMPLE instructions. A...B..C..click, save, and so on.

It CAN be simpler, but because there are so many developers here it doesn't click to them that not EVERYone here is a developer and doesn't understand a lot of the terminology used even in the seemingly very simple upgrade instructions. So I ask again, does anyone know of another site or even a youtube video that can walk a novice through upgrading their EZ publish without a lot of extra complicated, technical jargon?

Sorry, but upgrading is not click-click process, you need to have some technical knowledge (executing php shell and mysql scripts, backuping,...).

You also didn't note what version do you have and to what version you want to upgrade.
For example upgrading from 4.0.3 to 4.0.5 can be very easy and straightforward but upgrading from 3.8.6 to 4.1.3 can be very demanding....

Maybe in future we could have some upgrading wizard but there is not any available now.
