For Arabic I think you need to use utf8. I am not sure what do you mean by most of the tables are in utf8. Up to my knowledge Arabic fonts won't work in latin_swedish_ci. Finally, you can do some experiment, ie use phpmyadmin and export your old tables to an .sql file. If you have a local server try importing your exported file to it and check to see if all your chars are ok. I hope that I put you in the right track.
