Hi Michael, First of all, you need to make sure all software are running fine, this includes PHP, MySQL and Apache.
Now, PHP does run on MacOS X (10.1.x) read the line where it says: "If you need a version that runs on 10.1.x, the older 4.2.2 version is still available." (eZ publish 3 runs on this version). More info here: http://www.entropy.ch/software/macosx/php/
MySQL 3.23.x and 4.x also runs on MacOS X (10.1.x). Here is the info:

If you have problems running PHP or MySQL on MacOS X, go to the user forums for additional help. http://www.entropy.ch/phpbb2/ After everything is installed and running I would read eZ publish user's manual. http://www.ez.no/manual/ I personally recommend reading it first before you start installing it.
