'Option' Datatype & Products

Playing around a week ago I created an 'option' datatype in the product class then added a product to my inventory, supplying options and so forth. The product displayed on the site w/ a drop down list for the options (as it should). I then deleted the work (having learnt how the operation works). I just went back to set the same things back into production and I no longer get the pull-down list of options when a product is created using the same technique. Any suggestions why this is?

Another thing I noticed which may be unrelated is that when I look at most of the ezpublish classes they all list override templates at the bottom but clicking on the edit button displays the following error:

The template can not be edited.

The requested template does not exist or is not being used as an override.

I never created any override templates for any classes...
