Alex, I did take a brief look but it seemed to focus on sending form data to an email recipient instead of storing the data. Is there something else I'm missing?

You can create a normal class for this (without information collector) and let the user create objects.
I don't see a reason to have a "form" functionality beyond the normal classes/objects.
