Hi,
I'd like my title tag reversed from the default.
Instead of
"Car Modifying Parts / Home - Street Racers UK - Car Modifying Online"
I want
"Street Racers UK - Car Modifying Online - Home / Car Modifying Parts"
Which ini file do I change to make this happen?
A prod in the right direction would be appreciated :-)

I don't think there's an *ini file for that, it's a standard. Look at the design/standard/templates/page_head.tpl file. It generates the default reversed path. You can modify that to fit your needs.
Inline template debug mode is usually very helpful to find out where layout parts get generated.
