Do I need to set up and run my own webserver to run eZ?
..or can I use a web-hotel with php and mysql?

Have a look here for the requirements
http://ez.no/doc/ez_publish/technical_manual/3_6/installation/normal_installation/requirements_for_doing_a_normal_installation
My opinion is that even if you find a share host able to hold your first install, over time, with a growing database, you will have some perf. trouble.
You should at least run a Virtual Private Server with 256 Mo, Memory limit inPHP >= 24 Mo.
www.bytemark.co.uk offer stable VPS at fair prices.

So, in other words, the best thing to do is to set up my own server?

I would say yes, unless you go for one the eZ hosted offer by an eZ partner, You can find the list here.
