Sending newsletter with charset

Hello there,

I have something very strange, on my html template which is sent as a newsletter, I have a META tag:

<meta http-equiv="Content-Type" content="text/html; charset=UTF-8" />

In french, it is used to specify the charset in order to display correct accents.
The problem is, when I send preview of my email, this tag disappear...

Somebody help please?
